This lively, upscale Coastal restaurant is the brainchild of Hansell and his wife and business Partner Amy Hansell. After years of Chef Hansell working in acclaimed kitchens in New Orleans, Birmingham, and Aspen, the couple snagged the chance to be a part of the boutique hotel in Downtown Bay St. Louis.
A Waveland native, Chef Hansell grew up with a deep love of fishing, crabbing, oystering, and shrimping, which inspired his culinary career. The University of Southern Mississippi Culinary School graduate always had the urge to come home and open a restaurant on the Coast, so when a hometown friend reached out about being part of the Pearl Hotel, it seemed like the perfect opportunity for both him and his wife.
Amy Hansell created the restaurant’s design brand and formulated an upscale beverage list. The culinary team created a menu that is a celebration of local ingredients and creative dishes made to excite the senses, featuring bold, intense, and nuanced flavors from around the world.
The Thorny Oyster is the perfect choice for a relaxing but sophisticated dinner or a classy, comfortable date night, offering fresh and local Coastal fare, creative seafood dishes, raw and steamed bar specialties like oysters, shrimp, and snow crab, as well as melt-in-your-mouth desserts all prepared with a modern twist. Be sure to try the Black Pepper Cheesecake with strawberries and malted white chocolate or the Key Lime Pie with lavender crème, satsuma marmalade, and toasted almonds.
Closed on Monday, the Thorny Oyster is open Tuesday and Wednesday from 5 p.m. until 10 p.m., Thursday through Saturday from 11 a.m. until 10 p.m., and Sunday from 10 a.m. until 2 p.m. Due to the popularity, reservations are highly recommend!
