Enjoy a classic dining experience at Fairbanks
Steakhouse at Hollywood Casino has much to offer
TUNICA — Nestled upstairs at Hollywood Casino Tunica, Fairbanks Steakhouse offers an elegant dining atmosphere with great views overlooking a bustling casino floor, and it specializes in juicy steaks, succulent seafood and other enticing upscale dishes.
The restaurant combines a sophisticated setting with attentive service, making it a destination for memorable meals in the heart of Tunica’s gaming scene. Diners can enjoy a variety of offerings, from great cuts of beef to fresh seafood and rich pastas.
Fairbanks is open for brunch on Sundays from 10 a.m. to 2 p.m., featuring all-you-can-eat crab legs and bottomless Mimosas, Southern-inspired options such as biscuits and gravy with buttermilk biscuits and sausage gravy, shrimp and grits with grilled shrimp and Cajun cream sauce, chicken and waffles with hand- breaded tenders over a Belgian waffle, and steak and eggs with filets served alongside breakfast potatoes.
Other enticing brunch selections at the popular Fairbanks Steakhouse include pork belly with BBQ sauce or sweet chili sauce, country fried steak and eggs with gravy, eggs to order with bacon or sausage and potatoes, and cream cheese-stuffed French toast with strawberry topping. Sides like bacon, sausage, biscuit or toast are available, along with cocktails.
For dinner, the restaurant is open Thursdays and Fridays from 5 to 10 p.m., and Saturdays from 4 to 10 p.m.

mixed greens and vegetables, a classic wedge with iceberg lettuce, bacon and blue cheese, and a traditional or grilled Caesar with romaine, anchovies and croutons. Soups feature steak chili with roasted prime rib, beans and roasted tomatoes all topped with crème fraiche, the chef’s seasonal soup, and a signature onion soup with caramelized onions and smoked gouda.
From the grill, options at Fairbanks encompass filet mignon in various sizes, New York strip, dry-aged ribeye, cowboy ribeye, and Berkshire Kurobuta pork chop with drunken spiced apples. For enhancers one can add Béarnaise sauce, blue cheese sauce, garlic herb butter, sautéed onions or mushrooms, crab Oscar, jumbo gulf shrimp, or cold-water lobster tail.
Seafood selections served with sides include Atlantic Faroe Island salmon grilled or blackened, Gulf red snapper
pan-seared with creole sauce, Chilean sea bass with mango salsa, and twin cold- water lobster tails steamed.
Specialties highlight chicken Parmigiana with panko-breaded breast and marinara, beef short ribs braised in burgundy stock with garlic pomme purée, Fairbanks’ rutti di mare pasta with gulf shrimp, bay scallops and black mussels in arrabbiata sauce, and roasted prime rib in queen cut or king cut with a choice of two sides. A premium side of lobster mac-and-cheese is available as an add-on.
Sides consist of a baked russet or sweet potato, garlic mashed potatoes, steak fries, baked mac-and-cheese, lobster mac-and-cheese, steamed broccoli with optional cheese sauce, grilled asparagus, fried Brussels sprouts with bacon, and creamed corn.
The steakhouse is known for its wine selection to complement the menu, providing a full dining experience above the casino action.
