But the one essential ingredient that goes into a great seafood place is freshness. If you are lucky enough to take a tour of Bozo’s as I was,
you will certainly not find freezers stocked with imported anything. What you will find is seafood still gleaming from the pristine waters of the Gulf of Mexico and the surrounding bays, bayous and marshes.
Even if you are a rank novice (meaning that when you are asked if you want that po-boy dressed, you are confused), this is the place for great seafood prepared in the style of the Mississippi Gulf Coast.
