Gulf-to-table Coraline’s opens at Beau
BILOXI — Beau Rivage Resort & andouille sausage, tomato and
   Casino has elevated its food and beverage offerings with the addition of its new fine dining seafood restaurant, Coraline’s. The concept features a Gulf-to-table waterfront dinner venue set to become a destination for sharing coastal culinary memories with friends and loved ones.
The restaurant’s seafood menu is a collaboration from Beau Rivage Executive Chef Kristian Wade and Coraline’s Executive Chef Austin Dedeaux, both Mississippi Gulf Coast natives. Biloxi’s location on the Gulf of Mexico allows the chefs to source an abundance of seafood, such as oysters, crab, shrimp, snapper and redfish, and creatively execute palate-pleasing dishes.
Coraline’s oyster bar affords guests a front-row view of fresh oyster shucking and New Orleans-style char-grilled preparation, as well as oysters Rockefeller; Coraline’s signature 875 oysters; and Lighthouse oysters topped with crawfish,
savory velouté sauce.
A variety of cold selections
includes the West Indies crab salad, the tuna poke tostado, and the smoked fish dip, a blend of hickory-smoked fish, cream cheese, spices, and cherry pepper relish.
The hot appetizer section highlights classics with a Beau Rivage twist. There is seafood- stuffed fried green tomatoes, stuffed with crab, crawfish, andouille sausage, tomato and a savory cream sauce, and Coraline’s deviled crab dip.
The resort’s award-winning seafood gumbo is one of the soup options, and there are several salads, including the salted roasted beets with seasonal citrus, goat cheese, and candied Louisiana pecans in a charred green onion vinaigrette.
Snapper Coraline is a standout among the main courses, as is the yellowfin tuna. Along with straight off-the-boat selections, fresh fish is flown in daily and showcased as seasonal catch-of- the-day specials.

 variety of steaks and the prime pork porterhouse, braised Mississippi-style with caramelized onions and pickled pepperoncini peppers served with sweet potatoes and green beans.
An assortment of hearty sides round out any main course dish with selections such as fried okra, corn casserole, fresh greens and sweet potato souffle.
Over-the-top desserts and dessert cocktails embrace indulgence with sweet selections such as the Crème Brulee Martini, Strawberry Shortcake Martini, and Banana Upside Down Cake.
Coraline’s is located adjacent to BetMGM. Hours of operation are Sunday, Monday and Thursday, 4:30 to 10 p.m. and Friday and Saturday, 4:30 to 10:30 p.m. Reservations are available online or by calling (888) 750-7111.
