Mia Jacobs understands the attraction of home baking. The owner of Smallcakes cupcake shop in D’Iberville, Jacobs said she likes baking because it
is relaxing. “When I come to work in the mornings,
I put on my music and start mixing together my ingredients, and I am so relaxed. Also, there’s nothing like the smells when you’re baking. Baking is appealing because you can put together some ingredients and come up with a tasty creation.”
Boredom, like what propelled Rexford to spend more time in the kitchen, has been one of the biggest reasons people have been baking, Jacobs said. “My neighbor has baked banana bread several times and so have I. Banana bread has been very popular during the pandemic. It’s pretty easy to put together and usually has amazing results.”
Advice from Jacobs to new bakers include “just do it.” Don’t worry about making a mistake, she added, because you can always try it again another time.

Ingredients:
2 cups our
1 tablespoon sugar
1/2 teaspoon cream of
tartar
1/2 teaspoon salt
4 teaspoon baking powder 1/2 cup shortening
2/3 cup milk
1 large egg
Directions:
Sift together all dry ingredients.
Cut in shortening.
Blend milk and egg.
Mix together with fork. Turn onto clean counter. Knead until smooth.
Roll to 1/2 inch thickness. Cut to about 2 1/2 inch diameter (top of dinner glass).
Bake at 400 degrees for 12 minutes.
