The past two and half months have seen a rise in shared photos and social media posts on one tasty subject: banana bread. Everyone, it seems, is making
to the shelter-at-home order, but found she was doing more and more as the days went on. “Actually, I didn’t bake a lot in the beginning,” she said. “My family’s not big on baked desserts and
I can’t eat a whole chocolate cake all by myself – although
I have tried. But after awhile, I did get bored and made a batch of white chocolate cookies and some Italian bread. I even tried making biscuits. I was thrilled when a friend called asking for some banana bread.”
Rexford tried new recipes,
and even tackled some of her
old school recipes, literally. “I
pulled out a biscuit recipe from
my junior high cooking class.
It was still the best I’ve ever made. I don’t have much experience with yeast, so I decided to try some recipes.”
She’s noticed that many recipes from her 20- to

banana bread. There is three- ingredient bread, one with chocolate chips and/or walnuts, plus classic varieties and even low-sugar kinds. Why is everyone suddenly making banana bread?
Perhaps the answer lies with the shelter-at-home order due to COVID-19. People no longer going to their jobs are nding they have more time than ever to work on some hobbies, and that includes baking. Not only do home chefs have time to bake, the lack of baked goods
