To help make your family cooking experience as stress free as possible, take a few minutes before you begin and think about the skill sets each person has, and then assign tasks they can accomplish with a minimum of help.
As a group, do all the prep work first. Knife skills may be a problem and young kids don’t need to be flashing around a sharp chef’s
knife. Cut and chop all the ingredients and place them in small containers (just like the chefs do on TV). Make sure
to have all the spices at hand and do the same with the pots and pans you will need. Take each recipe step by
step and remember to have fun as you go.
To keep it simple, make grilled cheese sandwiches
and a side of sliced fruit. It’s about as simple as it gets, reasonably nutritious and affordable. If you want to make it a bit more special, there is a whole list of things you can add, from a better- quality melting cheese —
such as Gruyere — to sliced tomato, crispy bacon, avocado infused mayonnaise and lots more. Kids will love this sandwich if you make it with banana and mayonnaise.
If the grilled cheese doesn’t fit the bill, make homemade spaghetti and red sauce and a peanut butter and mayo fruit salad. Talk about simple and delicious!
Cheesy Grilled Cheese Sandwich
Sliced white or multi-grain bread White and yellow cheddar cheese 1 cup mayo
1⁄2 very ripe banana
Butter
Combine mayo and banana and
whip until smooth. Add two slices of each cheese to bread, slather on mayo, close sandwich and butter outside. Grill until golden brown and the cheese is melted. Serve with a side of grapes and sliced apple.
Spaghetti & Red Sauce
1 package pasta
1 can whole tomatoes
1 small bunch fresh basil Olive oil
Parmesan cheese
Italian seasoning
Cook pasta according to
package directions but drain one minute before it is completely done. Put tomatoes into a sauce pan, add chopped basil, olive oil and Italian seasoning. Simmer until thick. Add drained pasta to the sauce and simmer for two minutes. Serve with lots of fresh grated Parmesan cheese.
Peanut Butter & Fruit Salad
3/4 cup peanut butter
1/2 cup mayonnaise
1 cup seedless green grapes (removed from stems)
1 cup sliced apples
1 cup sliced bananas
Combine mayo and peanut
butter, toss in fruit and serve chilled.
