Bill Roberts and Heath Allen are on to a good thing. They keep things simple — from their business model to their restaurant philosophy and their menu and recipes as well. This is a business that centers on crawfish, right? So why not take a crawfish recipe that has been proven for 30 years and carry on with it? Got an idea to make the recipe even better? Don’t even think about it! Buddy Broome came up with this recipe all those years ago and it’s not going to change now.
But the Crawfish House and Grill has changed and it just keeps getting better. For several years it was a seasonal business that followed the crawfish season. When the season was over, the Crawfish House closed until the next
year. One day Roberts and Allen sat down and began to realize that they had the opportunity to make this a year- round, full-service restaurant.
Keeping with the basic idea they had in the beginning, the menu is simple but the few things that are on the menu are killer good. The crawfish are still seriously good, but now there are just more choices. While I was there on my first visit, a young lady came in and told me she ate lunch there yesterday and the crawfish were so good she had to come back today.
But it’s not just the crawfish. Take the mahi tacos: thick cuts of blackened and grilled mahi, purple cabbage, house special sauce, and cilantro. Best fish taco I have had in a long while! Another
