Fleur de Lis Gourmet Bakery has always made wedding cakes even though they’re especially known for their outstanding strawberry Bavarian cakes. With their reputation as premium bakers firmly established, owner Jason Brewer says the wedding cake business has entered a new era.
“We hired Kaci Parsons, an extremely talented cake decorator, who brings a new facet to our business,” Brewer said. “She
will do more advanced and specialty designs because she has an artistic mind set and experience doing advanced work.”
However, he stresses that good taste will not be sacrificed for beautiful design. “Our wedding cakes are decorated with butter cream and they taste as good as they always have,” Brewer added.
Fleur de Lis offers a wide range of styles for wedding cakes, including the classic Tiffany- inspired cake pictured in South Mississippi Living’s special bridal section this month. The five-tier vanilla cake with Tiffany blue icing features scroll and bead work with pearl accents. “It’s an ideal design, simple and elegant, but we’ve done quite a few rustic design cakes recently,” Brewer said.
He says wedding cakes should be ordered a minimum of two months before the wedding with more time needed at certain
times of the year. Fleur de Lis also bakes groom’s cakes, which are often chocolate or strawberry bavarian. “Our signature Strawberry Bavarian makes a beautiful wedding cake,” he said.
This signature confection was established by the previous owner of Fleur de Lis,
but Brewer perfected it and made it his own. It’s the shop’s most popular and
sells consistently throughout the year, regardless of season or weather. “Normally we go through 80 pounds of strawberries each week and that doubles the week
of Christmas,” Brewer said. “It’s labor intensive, but then everything we do is labor intensive because we bake from scratch.”
Brewer is a graduate of the culinary school at the University of Southern Mississippi. He worked for the previous owner of Fleur de Lis and purchased the bakery in 2010. He and his wife, Jessie, and father-in-law, Allen Weger, operate the business with four full- time and two part-time employees.
