to focus intensely on perfecting the daily offerings and to have room to change the specials menu from time to time, according to Executive Chef Anthony Rametta.
The flagship item on the menu is the one- pound bucket of mouthwatering giant Royal Reds. Ajax prides itself on providing the freshest seafood possible. Rametta says if it’s not fresh, they don’t offer it that day. These buttery and savory deep-water dwelling shrimp have a small bit of heat that comes
in on the back of the mouthful. It’s not too much burn for a casual South Mississippi diner, but it is enough to remind you it’s there. The reds are served with potatoes and corn on the cob.
The Mahi tacos can also be found on the menu of Ajax’s sister restaurant in Bay St. Louis, The Blind Tiger. These tacos are worth their weight in gold. Two large planks of fresh Mahi are delivered with lime and pico de gallo sauce. The interesting point is that these hearty-portioned, superbly seasoned and fresh tacos are roughly the same price
as those at a franchise restaurant. The big difference is that these fish steaks have never been near a freezer.
For shrimp lovers, there are a couple of options other than the royal reds. The sweet- chili shrimp are a little sweet, a little spicy and delicious. These are served on a bed of lettuce or can be served in taco form.
The best comfort item on the menu is the Ajax fries — a bed of crispy fries topped with Ajax’s slow roasted pulled pork and queso. They’re sweet, savory and satisfying.
Also, Ajax is proud of the men and women in uniform whether that be military, police officer or firefighter and offers a $5 service burger all day every day.
The most popular drink on the menu is the Bushwhacker, which is a Kahlua and Malibu Rum concoction that instantly transports you to a Caribbean Isle.
