One of the most unique dining experiences you will have on the Mississippi Gulf Coast is at Savage Skillet in Bay St. Louis. And that’s exactly how Chef-Owner Tara Pederson wants it be: a memorable food experience that is exciting and adventurous, but never pretentious.
“We’ve been open since March,” Pederson said. “I’m from Hattiesburg. We do breakfast and lunch and have a lot of grab-and-go items in our coolers that are very popular – hummus, pimento cheese, chicken salad – we can’t keep chicken salad in the cooler. All of the items are made in house. One of our most popular items is the collard
green wrap. I make a wrap and use collard greens instead of a tortilla. It’s different and people are curious about it, but it’s also familiar and collard greens hold up very well.”
Savage Skillet also features several local and regional products that Pederson selects herself and that are all produced in Mississippi or Louisiana.
One of the most popular items at Savage Skillet are the breakfast tacos. The tacos are available as grab-and-go options for those wanting a quick bite in the mornings.
“Our breakfast tacos are kind of our signature dish,” she said. “No one does them the way we do them. I worked in
